REFERENCES: This alga is eaten in the north of Taiwan. It is cooked in the “shao” method with pork. A jellied salad is made by boiling to extract the gel (the colloid carrageenan), adding the desired flavorings, allowing them to cool and set, then cutting it into bite-size pieces.
